After pulling rest for a hour on the counter than let them cool in a sheet pan in the fridge uncovered overnite. Holding them in a cooler for 8-9 hrs would IMO cause alot of carryover heat which could dry out and toughen your butts if you cooked till tender.2 Dec 2011
