You want to finish with butter, not sear the entire time. Start with a high smoke point fat, ghee, avocado oil, safflower, light olive oil, etc. After an initial sear on both sides you can then turn the heat down a little, add whole butter and begin basting to darken the sear and further flavor the meat.
