Soak
  • Combine grains in a large bowl or jar with plenty of water, several inches above grain. Add vinegar. Stir well. Cover with a cloth or close lid.
  • Place in a dark warm place. Roughly 70 F.
  • Soak for a minimum of 6 hours, or for best results overnight for up to 24 hours.
  • Rinse and pour off liquid before cooking.
