Why is my deep fried fish greasy?

Chef's answer
Once the seafood is cooked through, it will stop emitting steam, and oil will seep back into the food, making it greasy.
Frequently asked Questions 🎓
Meatloaf is notorious for being greasy when cooked in a loaf pan.
You can also pour the grease off a few times as it cooks for a similar result. I like to shape the meatloaf by hand and bake it in a rectangular baking dish - I put a couple of slices of bread under it to soak up the grease. When it's done cooking, put spatula between loaf and bread slices and lift to cutting board..
When it comes to jerky, the leaner the cut of meat, the better, as too much fat can result in greasy jerky that spoils quickly. "Leaner cuts with good beefy flavor like brisket flat are ideal," recommends Boemer.
I have made 2 batches so far the second was a bit less oily but still leaves a noticeable amount on my fingers. I just wouldn't use any kind of actual oil in your marinade. However in the drying process imo the best way to do it is take paper plates, put paper towels on the bottom, then jerky, then paper towels on top.

I simply place a wire cooling rack on top of a rimmed baking sheet, then place the meatloaf on top of the wire rack. This allows all the fat to drain out of the meat during cooking. The resulting loaf is moist, but not greasy.
