I have made 2 batches so far the second was a bit less oily but still leaves a noticeable amount on my fingers. I just wouldn't use any kind of actual oil in your marinade. However in the drying process imo the best way to do it is take paper plates, put paper towels on the bottom, then jerky, then paper towels on top.
